Aromatic Vegetable Pulao
My Mum Got this recipe from her friend . The first time she made it I remember the aroma was heavenly . The taste is on the spicier side because of the addition of the whole Garam masala . My Mum made an ultimate flavour bomb my adding all the possible vegetables we like into this pulao The secret ingredient is Goda Masala .
1 cup Basmati Rice (Washed and soaked)
300 gms of mixed vegetables
( I used cauliflower, peas, carrots, tendli, french beans , capsicum and paneer)
2 medium Potatoes
1 Chakriful,
4 Lavang,
Dalchini tukda,
4 Tejpatta
1 Green Cardomom
3 Sliced Onion
Ginger garlic Paste 3 tsps,
2 Green Chillies chopped
2 tsps Red Chili Powder
2 tsps Kala Masala
2 Tsps Goda Masala
2 tsps Shaan Biryani Pulav Masala.
1 tsps Sugar
2 tsps pulav masala
Oil 1 tablespoons
Ghee 1 tablespoon
2 cups Hot water
Instructions:
1) In a thick bottomed Pressure Cooker heat ghee and oil . We need the flavour of the ghee and the heating temp of the oil .
2) Add the Chakriful , cloves, cinnamon, tejpatta, Green Cardomom . Fry till they make the oil aromatic.
3) Add the sliced onions and the sugar . Sugar helps in caramelising the onions.
Add salt . Salt helps in sweating the carmelised onions.
Add the ginger Garlic paste and fry till the raw smell goes .
4) Add the spiced powders like the red chilli powder, Goda Masala, Pulav Masala. I prefer the Shaan brand Biryani Masala.
5) Fry for a minute . Then add the vegetables and stir for 5-8 minutes .
6) Add the washed and soaked rice. Add hot water double the quantity of rice .
7) Taste and adjust Salt as required .
8) Pressure cook at 2 whistles . Switch of the gas and do not disturb for 8-10 mins post which you may open the cooker and fluff the rice .
Enjoy with raita and papad.
